What shall I cook?

Having a couple of my girlfriends over for dinner tonight, very casual and I have no idea what to make! It has to be simple, not too many ingredients and takes maximum of 1 hour to prepare. I want to cook a starter (thinking some type of salad) and entree. I've got desert covered. Ideas please.

My favorite salad: beets (get them pre-cooked/peeled at Trader Joes/Giant/Costco), goat cheese, orange slices, nuts and vinagrette.

For casual get togethers, I love doing fish or shrimp tacos (marinate and grill or broil some fish, make guac, make/buy some different sauces and salsas to go on top, cut up some cabbage and cilantro). Serve with some good margaritas!

I've also made a great main course salad with pan-sear strip steak over arugula with pine nuts, parmesean, and a light vinegrette that is delicious. In that case, I did a soup to start and served with good crusty bread.

Or do PPs salad, followed by your favorite soup and paninis with some sort of yummy filling (grilled veggies with mozzarella; turkey, arugula and a fun cheese, etc).

Baked chicken caprese? I drizzle chicken with olive oil & basalmic, bake. The toss a tomato, slice of mozzarella on top and let the cheese get melty then toss some fresh basil on top. Easy and yummy

Salmon. Squeeze lemon on it and stick it in the oven. Serve with bread and salad. You are done!

Not pp, but you could easily serve over pasta. Or, keep things simple and serve with a fresh garden salad and some garlic bread. It does sound tasty!
