I happen to suck at designing menus so any good suggestions for one-pot dishes that would be easy to make in a large batch with about 20 servings? |

I don't bother with the shrimp or scallops, add more chorizo, and leave out the olives because my husband hates them. I skip the saffron because I honestly don't think you can taste it in this recipe, and I leave out the garlic in the dressing because there's enough of that flavor with the sausage. It says to serve it at room temperature, but we usually eat it hot after letting the dressing soak in for a few minutes. The recipe could very easily be doubled or tripled--it makes about 6 servings as is. |
