This is a staple in our house during the summer. It will also throw in some green and red peppers. Serve with pita bread and hummus. Yum!

Definitely no lettuce. I do tomato, red pepper, cucumber, black olives, feta. Then make a dressing with olive oil, red wine vinaigrette, a smidge of mustard to help bind it, and oregano. Yum! I think I'm going to plant my summer garden based on this salad!

Authentic would be tomato, cucumber, green pepper, slab of feta sprinkled with oregano. Dress with olive oil and red wine vinegar.
