Easter dessert ideas

Anonymous
For the first time in years it will just be the 4 of us for Easter. Usually we have about 20 people over and I make a huge ham dinner. This year we are just going to do steaks on the grill and twice baked potatoes. Just simple and easy dinner. So I want to make a good dessert. Give me some suggestions please!

I'm making Southern Living's hummingbird cake. It's their most requested recipe of all time. Yum!

Since I can't do a hummingbird cake (pineapple allergy), we have an angel food cake with strawberries, a coconut cake, or a pie of some sort.

I think I might do lemon merangue pie. DH is advocating for tarte tatin, though, and DS wants ice cream. Since I am the cook...

Tres Leches Cake with Strawberries (recipe from Food & Wine website). It has a touch of cinnamon in it, it's super easy, and people go crazy over it.

I make this a lot--it's on the smaller side for a dessert and I don't bother with the strawberries since I don't think they add much. You can make the whole thing (minus the crust) in the food processor so there's minimal cleanup. It was in the Post years ago. Scroll down to Lemon Cream Cheese Pie with Shiny Strawberries:

It's lighter than most cheesecakes too.

Since you're grilling, why not grill pineapple slices? Add a little vanilla. Simple and delicious.

Thanks! PP I think you nailed it with the grilled pineapple, maybe make a sundae bar with grilled pineapples, toasted coconut, almonds and ice cream

Lol I just couldn't figure out what I felt like, hummingbird cake sounds good as well
