What is the best thing you've cooked recently?

I'm looking for inspiration. I'm thinking weeknight meals that take under an hour. Fish or chicken preferred but I am open to anything tasty. It should be reasonably nutritious but it doesn't need to be lowfat. Bonus points if it is a one-dish meal that contains a vegetable.

A quiche in to which I added sauteed mushrooms, broccoli, and tomatoes. Everyone loved it and it was economical, healthy, and quick to make. We had it with a green salad and rolls.

This isn't really "cooking" as much as it is assembling but none the less...

Buy a grocery store rotisserie chicken and shred it with a fork. Put in large mixing bowl and add a can of drained black beans, chopped up peppers and onions, salsa/pico de gallo, cheese, and random seasonings (we like chili powder, garlic salt and caynee pepper) and cheese. Mix together and stuff tortillas and make quesdiallas! Very yummy and so easy. We had left over bacon the other night and tossed that in and it was great too. In the summer Ill toss in fresh corn or tomatoes. Very easy to keep meat free too.

Baked cornish game hens the other night. Came out perfectly. They are on sale at Giant this week so it's about $4 for a 2-pound hen.

I just followed the recipe in Joy of Cooking and worked fine.

Shawarma still chicken, inspired by a Scratch DC recipe.
Marinated the chicken overnight (greek yogurt, cloves, coriander, turmeric, cardamom, garlic, cayenne, etc.) baked, sliced and browned in a pan. Serve on pita with sauce (mayo, lemon juice, garlic, salt and pepper to taste) red onions, pickles with a simple salad of cucumbers, tomatoes and romaine. Makes for great leftover lunches too!!

Sauteed halved cherry tomatoes with olive oil, garlic, chick peas and "power greens" mix (kale, spinach and swiss chard). Stir in juice from half a lemon and then mix in feta cheese. Salt and pepper to taste. Serve with pasta or bread. It was delish and my toddler loved it.
