What goes with pork loin?

Making a big roasted pork loin, seasoned with garlic and rosemary. My mom used to make this but I haven't had it in years so I don't remember what we ate with it.

I usually do a rice-based side. But anything...salad, roasted potatoes, and agree with sweet potatoes.

I would do German- style red cabbage.

Do a nice fruit chutney. Prunes and pork is a great combination. Or dried apricots, or dried cranberries, or something. Google around.

Personally, I like horseradish mashed potatoes.

Roasted cioppolini onions, potatoes, baked or sautéed apples, pretty much any green vegetable. Enjoy!

I love serving pork over a warm spinach salad with shallot dressing. I also like it with roasted Brussels sprouts, roasted carrots, or green beans sautéed with mushroom and shallots.
