Ideas for Easter dinner--no ham, lamb or salmon

Cooking for an Easter dinner/birthday party for an elderly meat and potatoes person. No lamb, ham or salmon or lasagna, due to guest allergies and aversions. Ideas?

I would do cornish hens!!

And I thought I had a picky table to feed for Easter!

Roast chicken or beef brisket?

Roasted or candied carrots. Spring peas, possibly with mint.

I would do corned beef. Which is on sale at Safeway-or at least the one I went to yesterday. Or roast chicken/Cornish hen will work.

Is this just one guest that doesn't eat them? How about not passing the ham to the ones that don't eat them. Let them choose. When we have a party, we usually have more than 1 type of meat.

One guest doesn't eat pork, and has a shellfish and wheat allergy; the guest of honor doesn't eat lamb or salmon, but the pork-adverse does!

So you don't think beef is too heavy for spring?
