quick crock pot recipes

I just discovered crock pot chicken tacos (chicken breast + jar of salsa) and would love any similarly quick and easy recipes that I could throw in the crock pot in the morning and eat right when we get home. Baby/toddler friendly would be great, too!

My favorite is crockpot Mexican chicken

-2 lbs frozen chicken breast
-1 block cream cheese
- 1 can corn, drained
-1 can black beans, drained and rinsed
-1 can rotell or 1/2 a jar of salsa

Toss it all in the crockpot on low for 6-8 hours and the chicken will shred very nicely. I serve it either over rice or in burritos.

French Onion soup

Roughly chop onions, add beef broth and let it cook on low all day.
When you're ready to eat ladle it into a bowl, put cheese on top, pop it under the broiler so the cheese gets melt and serve it with some thick slices of bread.

pulled BBQ (beef, pork or chicken): put meat in crock, pour in one bottle of BBQ sauce. Cook on low for 6-8 hours. Shred meat with two forks. Serve. I think b/s thighs are much better than breasts for most things in the slow cooker.

corned beef: put beef in crock, sprinkle with seasoning, dump in carrots and potatoes, pour in a beer, cook on low for 6-8 hours.

split pea soup: 1 lbs split peas, frozen diced onions, baby carrots, chopped celery, seasoning, 6 c broth (I use chicken broth, but you could use veggie), optional ham hock. Cook on low 6-8 hours. Remove the ham hock. Puree with stick blender. Pull meat off the ham hock, chop and put back in the soup. If you don't eat pork, try some turkey or beef sausages. Or skip the meat altogether.

pot roast: in a large piece of foil wrap beef chuck roast, potatoes and carrots, sprinkled with one packet of onion soup mix and ~ 1/4 red wine. Cook on low ~ 8 hours.

Thanks for these. For the pot roast, you put the wrapped up ingredients into a dry crock pot?
