Chicken for a large group?

What is your go to chicken recipe? I have a great meat and veggie dish planned, but want to serve chicken as well. We are hosting a large family gathering with a wide range of ages, but most kids are in elementary school and past the chicken nugget stage. I need to avoid dairy/soy due to allergies.

The more prep work (or even cooking ahead of time and keeping warm on a hot plate) I can do ahead of time the better! DH is NOT a fan of chicken in a slow cooker.

My go to recipe is to get chicken at Costco. So good - people LOVE it.

I would just buy a bunch of cut-up chickens (8 pieces) and put them in a pan covered in a marinade (I love the TJs soyaki but you dont use soy, so try BBQ sauce or any other bottles marinade) and bake. Its easy, quick, and appeals to everyone.

If you have more time, you can use boneless chicken breasts, cut into strips and mix with olive oil and herbs and garlic and broil for 5-10 mins. Then serve with various dipping sauces.

I was going to suggest chicken in dijon tarragon sauce over mashed potatoes, but you said no dairy. I usually use half and half to make this but mix it with stock, so maybe you could use all stock?

What about a couple of butterflied, roasted chickens?

For just the family, I like to do chicken cutlets with a pan sauce. (Marsala, Piccatta, what have you.) For a large group you couldn't do them individually, but I wonder whether you could do a big batch of them on a sheet pan in the oven? Maybe with some kind of bread crumb crust instead of pan-fried?

Or is that too much like chicken tenders?

DS is dairy free and we find that hemp milk or quinoa milk work well in mashed potatoes, along with a vegan butter-like-spread in place of butter. I bet you could do half stock and half non-dairy milk and you'd be OK.

Also, your idea sounds awesome. I would add asparagus chunks.
