Easy lunch ideas for a picky group

We're having a family gathering this weekend, and kicking it off with lunch at my house before we go downtown for some museum hopping. I'm in search of a crowd-pleasing lunch idea, but the group is full of finicky eaters, so I need something that is easily customizable for each person. Aside from doing "make-your-own" sandwiches, are there any other suggestions? I had also thought about a taco/fajita bar, but we're going out for Mexican for dinner that night.

Baked potato bar. With salad.

Can you make it an early dinner, and make lunch a smorgasbord of an easy but large variety snacks?

Pasta bar, Make your own pizza, salad

Platter of baguette slices, pita chips, tortilla chips, pretzels, crackers.

Bowls of pimento cheese, onion dip, spinach dip, guacamole, fresh salsa, hummus, texas cavier (look it up, it's a black bean based vinaigrette dip...also can be eaten like a salad.

Raw veggies (carrot, celery, cucumber, pepper, grape tomatoes) and fruits (berries, pineapple, whatever).

Cheese cubes or slices. Maybe some salami or smoked sausage or something (my family could go meatless for this meal).

An oven tray of mini quiches, mozzarella sticks, whatever cooks for 20 minutes at 425.

Brownies and cookies.

Taco bar. you can do chicken, steak and fish, chopped lettuce, tomato, onions, warm tortillas, guac and a variety of salsa...
one gals salad, is another guys overstuffed steak taco.
and, if you are feeling excessively laxy, get all your veggies and stuff pre-chopped.

OP here. Thanks! I hadn't thought about some of the more "snacky" ideas. That actually sounds like a lot of fun, and not too heavy, since we'll probably do dinner on the earlier side anyway due to the toddlers in the group. Also, SO much more creative than my sandwich platter idea.
