What's for dinner this week?

Always love hearing new ideas.

We are doing a fresh 20 week so we are eating:

Tonight - spanish lentil loaf with roasted brussels sprouts
Monday - Sweet potato with lemon pepper guacamole and sauteed kale
Tuesday - Haven't decided yet but something easy.
Wednesday - Veggie tacos with fennel tzatziki
Thursday - Garlic eggplant lentils
Friday - Beans and huevos rancheros

Tonight: Salad loaded with veggies and bruschetta topping. Grilled eggplant that was then baked with chicken, peppers, onions, tomatoes, and mozzarella cheese

Tomorrow: DH is breaking in his new grill. Having Matambre (kind of like flank steak), corn with garlic butter, leftover salad, and tortellini salad with peppers, onions, tomatoes, olives, and italian dressing

Tuesday: DIY sweet potato bar and a lentil salad

Wednesday: Sesame chicken stir fry with veggies and rice noodles

Thursday: Fish tacos with pickled onions and whatever veggies we have left over

Friday: Sushi (our regular Friday routine)

Saturday: either going out for dinner or delivery. Usually Italian

Tonight - make your own burritos with cilantro-lime rice, black beans, lettuce, tomato, guac, salsa, etc. I made a huge pot of black beans a while ago that I keep pulling from (frozen portions)
Monday - Thai yellow curry with rice and stir fried broccoli
Tuesday - Lamb burgers and greek salad
Wednesday - Crockpot three bean chili with corn bread
Thursday - don't know, DH is making dinner (so probably pasta from a jar)
Friday - Asparagus Risotto

Chicken bruschetta w/brown rice
Philly cheesesteak stuffed pepper flatbread
Shrimp stir fry w/brown rice
Quinoa power bowl (kale, carrots, chicken, tomatoes, etc.)
Friday- take out

Monday - Asian noodle stir fry using the leftover chicken teriyaki meatballs I made over the weekend
Tuesday - Burritos with carnitas, brown rice, lettuce, tomato, roasted corn salsa
Wednesday - Take out - Either chinese or pizza
Thursday - Steak, roasted cauliflower, garlic and olive oil pasta
Friday - Blackened snapper, some sort of slaw, sweet potato fries

- Salmon, Mashed Sweet Potatoes, and Salad
- Meatloaf, Bok Choy, and Glazed Carrots
- Broccoli Cheese Soup and salad
- probably eating out somewhere

And the Chicken and dumplings will probably yield enough for three meals, the meatloaf for two, the soup for three....

Somehow it turned into quinoa week at our house. Tonight is quinoa with spinach, corn, tofu, grape tomatoes and basil pesto. That will be leftovers through Tuesday, then Wednesday-Thursday will be a big pot of lentils and veggies over quinoa and black beans. Not nearly as creative as all the previous posts!

Tuesday: Pulled Mexican Chicken in Crockpot ---> taco salads
Wednesday: Enchiladas with leftover chicken
Thursday: Sweet Chili Glazed Salmon, wilted spinach

Such a good meal! A staple in our house.

Tonight - smoked salmon omelette a with green beans.
Tomorrow - chicken and pepper fajitas
Wednesday - chicken and pepper fajitas again
Thursday - not sure yet, maybe spaghetti squash with tomato and sausage sauce
Friday - probably something out

Wed- cheap wings at hard times
Thu- senior night at IHOP (we bring my mom)

Wed other DD making sausage and veggies
