DD's friend just told us that she wrote on of her college essays on swimming with dolphins at a resort in Mexico. And how it led to her deep connection and love for animals

You can write about anything. Some threads on College Confidential are about what kids wrote about and they are all over the place.

Agree with 18:55. I wrote about how stepping off the edge of a cliff when repelling for the first time (even though I was deathly afraid of heights) helped teach me about conquering fears and the life lessons it taught me. Sorry it was a long time ago and I can't remember exactly how I phrased it. Had a couple of people write on my acceptance letter how much they loved my essay!
