omnivore cook married to vegetarian

I've seen discussions of vegetarians who are the primary cooks in their houses and are married to omnivores, but what about the reverse? If you are an omnivore cook and your SO is vegetarian or vegan (or otherwise chooses not to eat certain classes of food, not because of allergies or medical reasons), how do you handle that? Do you limit your meals to only what your SO will eat? If so, do you ever feel resentment for not being able to cook what you'd otherwise want to? Or do you tell your SO he/she has to fend for him/herself or take over the cooking duties?

Make stuff where the meat is on the side or can be added separately. I'm veg and my spouse is an omnivore. Sometimes I just eat side dishes for dinner while the rest if my family eats meat. Other times we'll have a meat and a non-meat main item at the same time. I think flexibility on both sides is essential. Veg can't always expect veg meals made for them, and non-veg should forgo meat sometimes to make a veg meal.
