We had a bunch of guests this weekend and did a taco bar for dinner. Then, yesterday, DH, kids, and I had leftover tacos. Well, there is still a bunch of meat left (both ground beef and chicken) and I don't want it to go to waste. Any ideas for using it in dinner tonight? DH will die if I tell him it's tacos again, for the 3rd night!

Are the meats highly seasoned with chipotle, chili powder, etc.? If so, make chili.
If the seasoning aren't too strong, use the ground beef to make a lazy ragu with canned tomatoes, garlic, evoo, onion, Parm and have pasta. Shredded chicken is good in pasta with a lazy man's white sauce -- a bit of the pasta cooking water and Parmesan -- and sauteed veggies. Or make curried chicken salad. |

Mexican lasagna
Quesadillas Chili or white chili with the chicken Chicken tortilla soup Or if you are sick of Mexican in General just freeze it and use it for tacos in a couple weeks |
| I would put it on a salad with some salsa. That's normally what we do with any leftovers and helps us eat salads. |
| Tonight we are having ground beef mixed with tomatoes, peppers, onions, rice and a little bit of a tomato sauce stuffed into a round zucchini and thrown in the oven with some cheese on top. |
