Ideas for fresh, healthy meals

I've been traveling and eating restaurant food for ten days. I feel gross. Even though I try to eat mostly healthy foods out (grilled fish sandwich without sauce, etc), it's still hard when eating out for a week+. Now I'm home and feel like I need a "fresh" cleanse. No more potatoes or breads for a few days; I need fruit. I need recipes for meals that taste light and fresh. Tonight I made grilled chicken with salsa and cilantro lime rice. It was great but I need more recipes so I don't default to chicken with heavy sauces or pastas with cheeses (I have two little kids so I sometimes just throw chicken and sauces in a crockpot to save time). I'm not sure this makes sense but I'd love some ideas, preferably vegetarian. Thanks!

How about brown rice, black beans, fresh tomatoes, avocado, cilantro, a dollop of sour cream, lettuce, roasted peppers and if you want a sprinkling of sharp cheddar? You can add more veggies if you want. We do this meal once a week!

That sounds really yummy, and very similar to what I had at the airport this morning. I will definitely be adding this to my repertoire. Keep them coming, please!

Stir fry. The options are endless - choice of veggies, chicken, shrimp, tofu, whatever. I don't make complicated sauces - I heat the wok, toss in a little oil like sesame or peanut, the saute the meat/chicken/shrimp if using, remove the meat and saute the veggies, then toss the meat back in, add some bottled teryaki sauce or soy sauce mixed with a little brown sugar and red pepper flakes, heat all together for a minute and done.

Chopped baby spinach salad with chicken, mango, avocado, tomato, and squeeze a fresh lime as dressing.

OP here. Thanks for the great ideas! We did corn, black beans, cilantro, and limo juice for lunch today. Now I'm eating pineapple. I definitely feel better than I did yesterday. I will be trying some of the other ideas int he next few days. Thanks!

My favorite is roasted garlic and butternut squash risotto with wilted spinach (we sometimes throw in grilled chicken too, but it's very substantial without).
