baked sweet potato with butter and brown sugar/maple for dinner?

Anonymous
I got a bag of sweet potatoes - the steam in a bag kind. I got them last week at Wegmans and would like to eat it before returning there on Friday. I was wondering if only sweet potatoes with butter and brown sugar is enough for dinner of if I should make something else? If yes, what? The chicken I had on the refrigerator is pass expiration date and I threw it away. The rest is frozen so anything I could make besides the sweet potato, would be more carbs (rice, pasta, etc) or/and some grilled zucchini.

Anyway, what do people serve with baked sweet potato?

Eat whatever you want. If you have kids you should probably serve something else too. People usually eat it with a meat or salad. You are, however, allowed to eat it with whatever you want.

We have baked potatoes with toppings for dinner sometimes, so I'd imagine sweet potatoes would be fine too.

Add some eggs for protein.

Oh, that is a great idea! I was kind of "worried" about the protein. Thanks.

Make hash out of it, if you have onions and spices, with a fried egg on top and zuc on side.

Sweet patato is pretty sweet. We just add cinnamon and mash them.

Sweet potatoes with just butter is divine. No need to add sweetener, imo.

And I agree with PP about adding eggs to make it a meal.

I don't put anything on top, except sometimes a small pat of olive oil "butter". This is my normal lunch when I
m not working out. Great use of calories, naturally sweet, and great for you. I would not do it for dinner though - typically I need something more and I like to model good food behavior for DCs.
