Does anyone have a quick, weight-watchers friendly dinner I can run out and pick up, throw together?

rotisserie chicken. eat yours skinless, over a big green salad. kids can eat the chicken with a side salad and if they are like mine with something carb-y like tater tots

Really in my mind the trick is to lower the carbs. So for instance tonight I did pork chops, steamed broccoli and carrots, and beets. The pork chops were 5 min on the George Foreman grill and I steamed the veggies at the same time (the beets were in the oven and took longer)

I also often do yams--not potatoes, or sweet potatoes, but yams. They aren't zero, but they are low. You can do them in the microwave in about 5 minutes, but I like to do them in the oven at 400F for one hour, and flip them over and stab them with a fork halfway through for caramelized juices…

I stay away from potatoes…just not good on the glycemic index and not good, point-wise. Yams are a healthier substitute!

Now if I could just stop my Dh from appearing after the kids are in bed with an ice cream cone or popcorn "made just for" me…maybe I could hit my goal!!
