Need help making this muffin recipe a little easier

This one looks great, is there a way to sub out mashed potatoes? I never make those: http://carrotsncake.com/2012/08/paleo-morning-glory-muffins.html

Ingredients:
•1/2 cup mashed sweet potato
•1/2 cup shredded coconut
•1/2 cup raisins
•1/2 cup chopped walnuts
•1/4 cup honey
•1/8 cup shredded carrot
•2 eggs
•3/4 cup almond flour
•1 tsp cinnamon
•1 tsp vanilla extract
•1 tsp baking powder

Directions:
1.Preheat oven to 350*F.
2.Combine all ingredients in a large mixing bowl and blend well.
3.Coat muffin tin with non-stick cooking spray (or use paper liners) and divide batter among six cups.
4.Bake for 28-30 minutes or until muffins are cooked all the way through.
5.Allow to cool before serving.

I would just microwave or if you have time bake a sweet potato and mash it up. Freeze what you don't use for the next time you make the muffins.

Mashing sweet potatoes is really easy, especially if you have a microwave -- even better if you have a microwave with a "potato" setting. You just wash the potato, prick it all over with a fork, stick into the microwave, press "potato" and walk away. After it's done, peel and mash. You probably just need one potato if all you need is 1/2 a cup.

Trader Joes sells frozen mashed sweet potatoes (only 1 ingredient: sweet potatoes!)..they come in little pucks, so you could microwave 2-3 pucks each time you need the 1/2 cup to make those muffins.

you can buy canned sweet potatoes that would be easy to mash. since they're pretty sweet you might want to cut a bit of the honey.
