| They are so good, I just eat them plain as any other vegetable side. However, if I'm feeling fancy, I will dice them and add feta and fresh italian parsley and toss in a light home made vinaigrette. |

I make napoleons with them and goat cheese. Or on their own with some salt and pepper and a drizzle of balsamic. But salad with them is awesome....

| Good with oranges, pistachios and feta. |
| Chop them up, toss with mayo, chopped celery and red onion. Toss in a little red wine vinegar to thin out the mayo. Yum! |
