I love coconut like there's no tomorrow. What recipes with coconut (with chocolate, with nuts, other) do you like that are not too difficult to make at home?

Coconut cream anything. Just make your standard vanilla frosted cupcakes and add shredded coconut on top. One of my favorites

macaroons - 1 bag coconut, 1 can condensed milk, a little vanilla. So easy! Bake at 350 for 15 minutes.

A Thai style dessert: You slightly cook ripe mango and pour coconut milk over it. Very good. Or you can add the coconut milk to sticky rice.
