recipes using black beans

One of my kids is a big a lover of black beans - any suggestions for meals I can make incorporating black beans? We do a lot of tacos and beans and rice and I'd like to find another format for the black beans. Thanks.

Black beans and sweet potatoes cubed- toss with line juice and olive oil. Add cumin, cayenne, salt, and pepper to taste.
Toss in other veggies your kid likes - onions, bell peppers, broccoli, carrots, grape tomatoes.
Toss in some ground meat or left over chicken if that's your thing.

Serve with sour cream or yogurt and cilantro

my kids do too-they love nachos, black bean soup, mexican "lasagna" instead of pasta use tortillas, any grain mixed with the beans works well, taco salad in a tortilla bowl.

One of my favorite soups is a can of coconut milk, a can of black beans, diced tomatoes and between 1-2 cups of cooked rice, add chicken/veggie broth to desired consistency. I add in cilantro and usually hot sauce to individual bowls. It's really yummy!

Black bean, quinoa and corn salad. You can add veggies if you want to. Season with cumin and lime juice!

I'm a big fan of "black bean pizza." Its a boboli or other pre-prepared pizza crust. You top it with black beans mixed with chipotle ranch or hot sauce, then mexican shredded cheese. Bake it, then top with diced tomato, onion, pepper, lettuce, tortilla chips. It's a good quick, weekday meal.

black beans, chicken thighs, and a tub of fresh salsa (not bottled), thrown in the slow cooker. You can serve it over quinoa or rice.

I make black beans with turkey kielbasa or smoke sausage and add a can of fire roasted tomatoes and some bell peppers. Everyone likes it.

I do this too. I slightly mash the beans, add breadcrumbs, a raw egg, scallions, salt, pepper (and whatever else you might want) and form into patties. Then I shallow fry in olive oil and serve with the usual burger toppings or salsa.

Quinoa and black bean burritos. It's a Six O Clock Scramble recipe. That cookbook also has a couple of good recipes for black Ben patties or burgers.

Chicken breasts, black beans, corn, salsa in the crockpot on low 10 hours, serve over brown rice. Makes enough leftovers to use as a filling for enchiladas.

you could make black bean dip and chips

you could also probably substitute black beans for in a falafel recipe and put in Southwestern spices and pit in a pita sandwich.
