Help me use up a bag of coconut

I have leftover shredded coconut and chopped pecans from holiday baking. Any recipe suggestions other than 7 layer bars? Thanks.

Dump into a bowl with one can of sweetened condensed milk, 1/2 cup sugar, 2 rounded tbsp. flour, a tsp of salt and vanilla to taste. Mix together.

Drop by the spoonful onto a cookie sheet lined with parchment paper.

Bake at 350 until golden on the bottom (top will be white with hints of golden.

The easiest and best coconut macaroons.

Put in food processor with a few chopped dates, almonds, tiny pinch of salt, a few drops of vanilla extract. This makes a wonderful topping for oatmeal or added to plain yogurt. I use this to make my own energy bars by adding a few drops of water to make it stick, then pressing it into a brownie-bite silicone pan (you could just press it into any old dish and cut squares.) Refrigerate leftovers for up to 1 week. Sometimes I mix in carob chips.

Make jasmine rice with a mix of water and coconut milk, once done stir in some of the shredded coconut along with some craisins and almonds.
