Pork roast recipe to go with corn pudding

Making dinner for in laws tomorrow, kids have requested corn pudding (like baked cream corn, sweet, rich & soft), broccoli and rolls. Can't argue when the kids ask for veggies!

I usually make an apple stuffed or spinach stuffed roast, but it seems really 'soft' to go with the corn as it results in a tender, falling apart pork with soft baked apples

Any suggestions for another pork recipe? Thinking something with a crust?

I made the Pioneer Woman's roast in the Dutch oven this week. It was good and firm, but no crust.

If you like mustard, you can mix up spicy mustard with grated Parmesan cheese, spread it on top of the pork roast, and bake. Very tasty.

wrap the roast in bacon before you roast it. Delicious, although your cardiologist may disagree. I think the original recipe I used was Giada/Food Network?

make a bbq spice rub.

Stick with apple stuffed.. Sounds yummy along with the corn pudding!
