Help! I have a ton of leftovers! Need ideas.

Have had guests all week. I have a ton of leftovers and need help re-purposing them for other meals.

Pot Roast
Crash Hot Potatoes (boiled potatoes that were smashed then roasted with a bit of olive oil)
Cooked carrots and onions (from pot roast)
Turkey (a LOT)
Mashed Potatoes
Peas
A little stuffing

A lot of deli ham, turkey, and sliced cheese (bought for lunches)

Any ideas? Everyone leaves tomorrow and our small family can't eat it all before it goes bad, and I'm the only one who can happily eat leftovers for days anyway.

Thanks, but I spent a lot of money on the food and I do
Hope to continue feeding my own family with it. We don't eat out a lot because it's not in our budget so I do actually need this food. I guess I should have rephrased it to focus on how to re-purpose leftovers. Any ideas how to do that?

NP here... I think you could do some sort of potato pancake with the two potatoes you have on hand.

For the turkey and veggies, maybe some sort of soup -- box of broth and toss everything in to heat up; maybe include some pasta

As for the roast beast and deli sides.... sandwiches are your friend -- isn't that what you bought them for in the first place? (RB not withstanding).

You can make Turkey Pot Pie!
Turkey
Peas
Carrots
Onions

Chop up the turkey. Rinse the carrots and onions (to get rid of the pot roast flavor) & then mix with the peas. You can follow any basic crust recipe or better yet use ready made frozen crust already in the pan. Carve up the turkey and freeze it. Turkey freezes perfectly well.

If your family is over sandwiches you can chop up the deli meat and cheese and throw it in a quiche.

3 eggs
1 & 1/2 cups milk
Cheese & ham
Pie crust

Bake at 350 for 50min or until firm.

I use left over pot roast for brisket tacos! Yumm!

Stir fry chopped meat with garlic, ginger, onions, veggie, soy sause, Sriracha, and add to noodles.

Shred the pot roast and make shepards pie with that, the veggies and the mashed potatoes.

Make turkey enchiladas. They freeze beautifully and you can just pop them in the oven

Soup would also be great with any of the leftovers. The crashed potatoes could thicken a soup nicely.

You're right PP I said my family wouldn't go through it, but I meant in its original form. if I served pot roast and potatoes again I would have a riot on my hands! I was hoping for ideas like the turkey enchiladas that can be frozen or the shepherds pie that uses up several of the options.
