Winter salady-thing?

Anonymous
Need a suggestion for some kind of winter green thing I can put out for our open house tomorrow - the rest of the food is taken care of.

I was thinking about tomatoes/mozzarella, but it isn't very seasonal. Any suggestions?

thanks

^I immediately thought of a cranberry/walnut/spinach salad, too. Good choice.

How about mixed greens with pomegranate, goat cheese, and a nice balsamic/white wine/champagne dressing? The pomegranate adds a festive/holiday touch.

I did this last weekend but substituted dried cranberries for the pomegranate (I find the pom too tart and seedy, but maybe I'm doing it wrong). Costco even sells the tub of spring mix and large container of feta and the Ocean Spray Cranraisens. The Giardelli (?) bottled champagne vinaigrette is also very good.
The spinach/walnut/feta also looks great (I don't know what the best dressing is for this).

Add some goat cheese and it is a party!

ditto & ditto

OP, I usually associate sliced tomato/mozzarella with summer, but I'd use those tiny mozzarella with cherry or grape tomatoes sliced in half. Little more festive looking.

This looks good but my problem is that I am doing about 8 other things, all of which involve a lot of work, and this seems a bit involved...

maybe just throwing together spinach, walnuts, cranberries and goats cheese and a dressing would be easier.

Yep.

And if you don't like spinach, arugula or mesclun blend will work.
