Can I peel the potatoes today?

So I'm making mashed and a sweet potato casserole for thanksgiving. Can I peel them today, put them in a ziplock and pull them out of the frig tomorrow to boil and cook? Or will they turn brown and mushy?

| Absolutely! Just put them in a bowl submerged in water. For good measure, I would add a lemon wedge to the water. |
