Good Vegetarian Cookbook

I am trying to cook more vegetarian entrees. I am looking for a good cookbook that has lots of vegetarian recipes. I can easily cook vegetarian if I rely on rice, potatoes, pasta and cheese. I am looking for more creative ways to use beans, lentils, eggplant, and squashes. I don't mind some or the starchy carbs and cheese but I would prefer to concentrate on the beans, lentils etc.

I have the original Moosewood Cookbook, which is great but the recipes are very long and involved for a weeknight dinner.

I think Vegetarian Cooking for Everyone is the best veggie cookbook out there by far. It is a bit encyclopedia-like though so if you're more the "scan through blogs with lots of photos" type of person there might be better options.

Do you have the Moosewood Cooks at Home? Not sure if that's the original or a later one, but I love it. I also get a lot of recipes from Vegetarian Times magazine.

Second this. It's my favorite cookbook, period, and I'm not a vegetarian.

This cookbook is great--if you have the time!

Otherwise, I prefer Mark Bittman's How to Cook Everything Vegetarian. The recipes are short, but reasonably tasty, and perfect for cooking if you are pressed for time, as many working parents are.

I personally find Moosewood to be very bland. I have to double the spices and up the salt with most recipes.

I never cared for Moosewood, always struck me as a very 70s approach. I think Deborah Madison's books are great.

I like Heidi Swanson's cookbooks - she writes at 101cookbooks.com. I have another - I think it's Vegetarian Cooking for Everyone.

We cook mostly vegetarian at home and I was vegetarian for 20 years. My favorite cookbooks are the Joy of Cooking, the Bittman book mentioned earlier and the Vegetarian Cooking for Everyone book. I also have a hefty Indian cookbook which is great for lentils and eggplant.

they are great - but nothing in it is easy to pull together mid week meals.

Try a bunch from the library. I like Madhur Jaffrey and post Punk Kitchen.
