| Are you re-heating them yourself? I apologize for totally being that jerk who doesn't answer your question and instead suggests you do something totally different, but latkes that aren't fresh are pretty gross so I wouldn't make them the focal point of a party. |
I would agree with this. Almost any fried food is pretty gross if it's not eaten right after cooking, and latkes are no exception. They're very easy to make though, especially if you have someone willing to spend part of the party in the kitchen. |
| When I do a big latke party I make them in advance and freeze them - then I bake them before the party. They aren't quite AS good as fresh, but they're better than almost anything you can buy. The get crispy and stay potatoey. Otherwise I'm cooking like 12 at a time and would never be able to get my guests fed. |
| OP here..complicated scenario..feeding a group at elderly parents house out of town. My plan was to freeze them and heat up on arrival. I don't want to do any messy frying there. I may consider making them here but I have many other culinary tasks related to the same weekend. |
| Freezing and reheating in a hot oven, as pp mentioned, might work. I just didn't want you to expect that a big platter of latkes you picked up or someone dropped off at your house was going to be ready to serve. |
I'm the latke maker who freezes in advance - in your case then I think it would work well, depending on how far out of town and if you can keep them on ice long enough. Make them this weekend and freeze - get it out of the way, and Chanukkah is only 3 weeks away! As long as I'm not doing all my other cooking tasks on the same day, once I get into the frying groove I find it find of therapeutic to cook them all, as long as I can get some peace and quiet away from the family in the kitchen. |
