| How do you serve it? Can anyone recommend a recipe? |

Use it like spaghetti.

14:25 here -- I haven't tried that recipe but Martha usually does a good job.
I did paleo for a while and don't want to go back to it. So I'm fine with never eating spaghetti squash. |
| I just cook it for the hour - rip it up and toss butter on it and it's good to go. |
| I slice it (carefully), microwave each side for 6-7 minutes and eat wither with spaghetti sauce or olive oil and parm. |
| Do what PP does to cook: halve, scoop seeds, microwave halves until JUST fork tender about 4-6 minutes/half depending on size, let cool, then scrape out with fork into "spaghetti." We then make it into salad with cubed tomatoes (flavorful beefy heirlooms are best if you can get them), minced onions/garlic/shallots, chopped fresh basil, and oil/vinegar. |
| It goes great with pesto. |
| I cut it in half, scoop out seeds and put into crockpot with some pasta sauce and raw sausage (cut into smaller pieces). Cook on low. Wen its ready, scoop out the insides and use pasta sauce with sausage. It's easy and delicious. |
| Try a lemon tahini sauce-tahini, lemon water garlic and salt blended together-and some peas or scallions. |

Mac n cheese, sorta - http://www.skinnytaste.com/2013/01/baked-spaghetti-squash-and-cheese.html?m=1
Or make a fabulous homemade tomato sauce for it- http://food52.com/recipes/13722-marcella-hazan-s-tomato-sauce-with-onion-and-butter But Even as a vegetarian, I consider spaghetti squash a nice side dish, not a meal. It's still a veggie and not filling enough as a meal. |
| I tried to eat it as a pasta substitute several times but like PP, find it too side-dishy. |
I tried it and found it too sweet. And the texture. Blech. |
| But, I bet it would be good as a sub for potatoes to make latkes. |
They lack the carbs and oil absorbing and binding propensity of potatoes. |
