Fermentation crock

Anyone use them? How do they work and what type do you have?

I've used my grandmother's old bean pot - a glazed ceramic pot that looks like a cookie jar. Worked fine! So did glass jars with the contents weighted down with a plastic bag stuffed under the lid (lid NOT screwed on tight!).

I used our crockpot (with I think a weighed down plate).
