I'm digging soups, stews, chilis right now. What are some of your favorite recipes for Fall?

I make homemade chicken pot pie with the cooks illustrated recipe, but my kids won't eat it.

I've made this minestrone recipe for years - so hearty and delicious!

I'll improve a bit and top it with different cheeses, and maybe some chopped fresh spinach. And some really good bread for broth dipping

Lasagna with white sauce and red sauce carefully layered.
Shepherd's pie.

Will try my fish pie as soon as it's cold enough.

I picked this recipe up from here last year. I do NOT like Beef Stew, but on a whim tried this one. This is FOR REAL delicious. I do the red wine/mushroom variation. I also do a home made beef stock from bones from the farmers market. I feed this to guests all the time and they go nuts over this. I serve it over mashed potatoes.

coming soon to a crock pot in my kitchen:
chili
pork butt with salsa, black beans and corn
pot roast
beef stew
maybe corned beef (so salty, but so tasty!)
split pea soup w/ ham
maybe chicken, sausage & white beans (pseudo cassoulet)

Not a recipe, but the other day I was imagining a stew made with butternut squash, chickpeas, cauliflower, smoked sausage, and flavored with curry powder.
