Asheville, NC with a nearly 3yo

Any Asheville must sees or dos? Also curious on driving stops in between DC and Asheville. We're from Europe annd this'll be our first trip southward! We'll have about a week there in October. Thanks for any tips!

We went when our children were a few years older but there is a lot to see and do. I can't speak to things for a child that age but can remember the fun we had gem mining, white water rafting, hiking and rock hopping. Watching the sunrise and then the fog rolling in on the front porch in the afternoon while listening to Carl Sandburg read his Poems for Children. Going down to sliding rock and over to Cherokee for Unto These Hills. Not to mention the fun we had at a storytelling or listening to Bluegrass and maybe clogging. Just driving on the Blue Ridge Parkway. You might also like the Biltmore Estate. There is so much more but we spent quite a few summers there.
