If you cook for one, what kind of meals do you make on a regular basis?
I cook for one and I have to say that I tend to eat snack type food mostly instead of making a meal. I can't be bothered to do the shopping (and deal with waste and leftovers), cooking and clean up all just for me. I will cook a piece of meat or fish, heat up frozen veggies, cook quinoa but also will often eat melba toast with cottage cheese and tuna, or make a big veggie omelet, I'd love more ideas of quick, easy, low mess, light prep, little leftover meals! |

I'll make shredded chicken so I can add it to various meals during the week. Can freeze it too.
Same with turkey meatballs. Now that fall is almost here (yay!) I'll make and freeze a lot of soups |

OP,
I would try finding recipes for 2 and freezing half. Invest in a few pieces of tupperware. It's easy to build on what you're already doing--a protein, a starch--quinoa, pasta, rice, and toss in a few vegetables. |

I loved recipes from a cookbook called "Going Solo in the Kitchen"
Great ideas and portioned for 1-2 servings so I had lunch the next day or dinner the next night, but not so much that it went to waste. |
