How do you make biryani?

Please help! Want to surprise DH - it's his favorite food in the world and I've made biryani from packet mixes at the Indian store, but they never turn out right - anyone have a fool proof recipe?

I add the rice to the oil with the onion, garlic and ginger, and spices, and toast it, before adding the water.
