Lunch for new friends today

What would you make? It will be pretty casual, but I'd like to make some effort to do something nice. Maybe something Americana? Nothing that requires extensive prep since I haven't even gone to the store yet. What would you make?

How about mini pizzas? You can go get those small premade pizza crusts and make a few of each options....maybe a fresh Tom basil mozz, pepperoni and a veggie? You could also get baby spinach,feta and strawberries and make a nice salad!

Grill some chicken and veggies this morning. Cut up the chicken into chunks to make a chicken salad (some mayo, yogurt, grapes, pecans, curry powder), grilled veggies, nice loaf of bread

If you're dining al fresco, a nice appetizer plate is roasted red peppers (you can get them in a jar), goat cheese, and sauvignon blanc. For bread I like to get a baguette and have them slice it into rounds at the store. (You could do that yourself, but they do it in 0.5 seconds, and they come out nice and even.)

Egg dishes are always easy and you can use what's on hand for a strata or frittata. With a nice easy to make soup (minted (frozen) pea or basil zucchini) or a salad, yummy.

Get a rotisserie chicken to shred and make a nice homemade chicken salad. Lay out croissants and lettuce and tomato and everyone builds a sandwich. Devils eggs, a bag of chips, some fruit and cookies. Nice summer lunch!

This sounds good but instead of croissants I would do fresh crusty rolls, like those Portugese and rosemary rolls you can get at Whole Foods. Croissants for anything other than breakfast seems so "80s" to me.

+1. I LOVE chicken salad on a croissant. I don't think of the 80's when I think of croissants -- I think of my trips to France!
