| For breakfast, make a few dozen muffins and put them in the freezer. You can keep them for months and pop them into the microwave for 60 seconds in the morning. There are tons of healthy muffin recipes online that use whole wheat flour, greek yogurt, applesauce, bananas, etc. You can even find some that use vegetable purees to replace some of the fats. My DS loves them. |

this. i make these sandwiches with chicken or beef, top with cheddar cheese and the spread she describes and freeze. they come out beautifully. in a pinch, i've also thrown pesto on the chicken instead of making the sauce and that's pretty good too. |

Do you have Trader Joe's nearby? They have some great freezer items that I keep handy for my 17 month old (frozen raviolis, frozen turkey meatballs, etc) Not homemade, but it will do in a pinch

Yes, you can absolutely freeze breakfast burritos. Wrap them individually in aluminum foil and then pop in oven/toaster oven/microwave (out of foil in microwave, of course). Overnight French toast. If you have time to make a Costco run, lots of freezeable stuff there.
More for you than your toddler, though not off-limits: If you are planning to nurse, oatmeal is your friend. Either way, I highly recommend batches of these -- you can also freeze them. 30-45 seconds in the microwave and they're good to go: http://greenlitebites.com/2009/03/07/banana-oatmeal-cups-with-chocolate-chips/. Also recommend making a batch of hard boiled eggs every few days - easy one-handed protein boost. |
