| Eggs last a while in the fridge- I never notice the date and in my single days, they would be in there for a while. Never went bad. I would do it. An aside - if you steam eggs instead of boiling them, the peel much easier. We steam them for 16 min, but you can adjust the time to your liking. |

| "best by" dates are DESIGNED to make you throw away food and buy more. Scam. Use your senses like nature intended. If an egg has gone bad, you'll know it. And it will be MONTHS past any date on the packaging. |

For hard boiling, eggs that are a little older are better. Boil the very fresh ones, and their shells stick. The ones with shells that come right off are the ones that were in the fridge for awhile before you boiled them.
