Brunch item for girls crafting day

Me and my friends are getting together for a crafting day this weekend. We decided to make it a pot luck brunch thing as well. Any ideas of something cutesy and fun, yet somewhat simple that I can bring? As far as I know, someone is already bringing baked eggs, caprese, bubbly and cheddar biscuits.

OP here, just received another update, someone is bringing: Cinnamon baked french toast w/ fresh fruit, bacon and prosecco.

Oh forgot to mention, I dont eat any meat so looking for non meat ideas. Veggies are good, but what should I do with them / how to preare?

What time of day? Can you do a bunch of grilled asparagus served cold in a nice vinaigrette? Or a similar green bean salad? A salad with fennel and oranges? Or just a raw veggie platter with homemade hummus or another dip?

Or something with potatoes ... hash browns or hasselback potatoes?

I like the idea of potatoes, that's a brunch necessity. I need to google some recipes. I'm not really a cook, so a recipe is a must!

...Except if you want vegetarian recipes, like the OP stated that she did at 10:42?

Look for a nice recipe for spinach and goat cheese filling for quiche/tarts/etc. Or make one up. I've often used chopped spinach, goat cheese, finely shredded parmesan or romano cheese and then spices (nutmeg and cinnamon work nicely), cook the filling in a skillet until it is melty soft. Then spoon into scoops crackers. Put them in toaster oven when you get there just to heat and brown, then serve. I will put the filling into a tupperware and bring the chips, then assemble and toast. Takes about 5-10 minutes (about 2 minutes to fill the scoops chips and 3-8 minutes to toast). Very nice and easy.

Fruit salad with mint and a splash of simple syrup.

If you want to impress, vegan ceviche (made with hearts of palm instead of seafood). amazing.
