I would appreciate any recommendations for a main dish to take to an outdoor picnic tomorrow afternoon (no cooking at site). Looking for somewhat healthy suggestions for preschoolers and their parents that are not likely to cause food borne illness in the heat.

I would make a ton of little sandwiches and keep them in a cooler until ready to serve. Sometimes I use tiny cocktail bread and other times I use quartered sandwiches. I try to use different breads for "coding."
Pimento cheese/white bread (Whole Foods pimento cheese is great) Cucumber cream cheese spread/wheat bread Turkey and swiss/rye bread Hummus, roasted peppers, basil, vinaigrette/sourdough Cheddar and apple and chutney/pumpernickel bread PBJ/white bread Have pickles, olives, squeeze jars of mayo and mustard If you're doing side dishes I'd just have: quartered watermelon, strawberries veggie tray or a few veggies with a yogurt dip chips pasta salad perhaps brownies/cookies drinks |
| If you're making sandwiches, you could use pita pockets. Those would help the little ones keep their sandwiches intact and their hands clean. |
| For preschoolers, I think the following might work: fruits, cold chicken nuggets, peanut butter sandwiches depending on allergies. |

| I would make a large batch of a quinoa salad. Diced chicken, chick peas or other beans, some green and red veggies for color, scallions, dressing of some kind. Be creative with what's available. |

| Pasta salad with a protein |
I use chickpeas for my protein in pasta salads, to avoid any non-refridgeration issues. Plus then vegetarians can eat the salad. |
