We are in a dinner slump - can you share some mostly veggie recipe ideas?

Not a big meat household, and I am personally trying to cut down on processed grains and wanting largely veggie based dinners.

Challenge:
- not salads. so tired of salads right now.
- spices, herbs, oils etc are fine - but looking for meals that are about 75% veggie based

Totally out of ideas and need some new food for thought!

One favorite is sauteed veggie subs, that become yummy fajitas a few nights later. I buy various colors of peppers, slice, and saute with lots of onions. Once the are soft add some balsamic vinegar/soy sauce/ Worchestershire sauce (not all at once, but vary depending on mood). Serve on crusty rolls. A few nights later reheat leftovers and serve with tortillas and fajita-type fixins. Yum!

We had scrambled eggs and a salad tonight. Everyone was happy, and it took no time to whip up.

Roast beets and slice. Heat up some coconut oil, add cumin and coriander and some sesame seeds. Once toasty, pour over beets and stir to combine. Cook up some rice with frozen peas. Add some chopped mint to it. Open up a can of navy beans.

Layer everything in a bowl and eat with some tomato sauce or some yogurt.

Another one for you - ratatouille with fried egg on top served over couscous.

Mexican lasagna?

I just throw the ingredients I like in a pan...

Diced tomatoes
Black beans
Corn
Onion
Garlic
Cumin
Chili powder

Stir in a large pan until everything is cooked. Place a layer of mixture in the bottom of the pan, top with tortilla (either corn or flour...your choice), top with more mixture, tortilla, repeat until the mixture is used up, and top with cheese, green onions, whatever else you like. Bake in 350 oven until bubbly.

Like I said, you can put anything you want in this dish. Add more veggies, meat, whatever you want. It is super simple, and everyone seems to like it.

Moroccan Eggplant & chickpea stew (over couscous)

You can switch out some of the veggies if you want, but a veggie stew over whole wheat couscous.

Beans, tomatoes and spinach stew

soups and stews are great. Here's a couple of quick ones:

Red lentil soup--saute onions with cumin, add about a cup of dry red lentils, a couple of diced tomatoes, enough water 2 cups or so, and a veg bouillon cube.

Coconut soup--saute onion, add one can of chick peas, white or sweet potatoe (2) diced, sliced cooking greens, a can of coconut milk (spices salt, turmeric, cumin, corrindor, cayenne)

Another idea--beans or tofu (protein), rice/potatoe/quinoa/noodles, veggies (sauteed greens or roasted broccoli)

I probably have some misspellings in there.

I understand the slump. Another reason I enjoy checking out recipe books from the library. I use them to get ideas and then make my own version.

Quiche. Leek and mushroom, leek and bacon if your can handle a little meat, etc.

I like to make meals that are mostly veggie or sometimes fruit with a little meat for seasoning.

Cabbage pot: white cabbage, onions, and carrots cut up in a pot with a little turkey polish sausage and just a little water. Let the whole thing boil.

Lentils: cook some really spicy Italian sausage (could be vegetarian sausage), with onions, carrots and garlic. Add lentils and water and let simmer until cooked through.

Apples and onions sauteed with a little sausage or bacon.


I also like to substitute lentils for ground beef in various recipes. Lentils make great taco filling, and great chili!


Finally, I like to substitute shaved veggies for rice or potatoes.

Make hashbrowns, but with brussel sprouts (Trader Joe's sells them already shaved), and serve with roasted tomatoes and poached eggs.

Make fried "rice" but substitute shaved cauliflower for the rice.
