I make a simple buttercream and add nutella. Then for layers, add a simple, boxed chocolate pudding and fresh cut strawberries. It's amazingly moist and not too sweet (I go light on the frosting).

If I'm making a layer cake, I make the chocolate sour cream cake from Cook's Illustrated.

If I can leave the cake in the pan, it's Texas Sheet Cake all the way.

I really like the recipe on the case of the Hersey's chocolate powder box. They have a cake and frosting recipe - delicious and if you make it from scratch, you can do whatever substitutions you like.
