Meal with bacon- need ideas

My mother in law was visiting last weekend and insisted on buying two packages of bacon. My husband and I eat vegetarian at home (we will happily eat meat when served it at someone else's house). We did not eat the bacon. I don't want to waste it. What are some exciting ideas besides just frying it and eating it? BLTs are the only thing I can think of. Thanks!

Honestly, you can put bacon on almost anything. It provides a nice savory, salty, smoky flavor.

Put it in your tomato sauce and then sprinkle extra bits over the pasta.

Look up recipes with pancetta and use the bacon in place of it.

If you don't want to use it all at once, freeze the raw bacon in batches, so you don't have to defrost the whole thing.

Was also going to suggest freezing it. I lay the package out on parchment paper, piece by piece, then roll it up--that way I can just peel one slice at a time off the roll, without defrosting the whole package.

Cook the bacon, crumble, and then freeze, and you can add it as you wish to different meals.
