I echo the Mandalorian, Sherlock, Avatar: The Last Airbender and British Baking Show recommendations.

To those, I would add The Clone Wars, How to Train Your Dragon and Dr. Who.

My teens are older now, but we still watch these together and are looking forward to the Bad Batch premiere. It took me a while to warm up to the Clone Wars, but it was worth it for bonding with my son. Also, there are Lego versions of many Star Wars and superhero movies that are short and both my daughter and son get a kick out of them.

I am not a troll. This is what my son watches. He still laughs at cartoons but has a more serious side as well. I think it is kind of an interesting phase for him. Still enjoys being a kid at times while maturing into a good teen at others.

It's old - but we love watching Leverage.
Locke and Key is great (if he likes horror - but it can be intense)
Cobra Kai is a favorite

I think these shows would probably be fine for a 12 year old, but different families have different concerns and I advise you to check Common Sense Media or IMDB Parents Guide for specifics.

My 10 year old daughter loved cobra Kai. I don’t remember the BJ reference, but those things go over my daughter’s head. She watches for the exciting plot lot, good v evil, fight scenes, hilarious Johnny, teenage story lines, and cliff hangers. In our family bad language isn’t an issue. I have zero problem with my kids hearing it. I also appreciate that Cobra Kai has no sex/nudity.
