I have done similar and the "color" show more depending on what accent colors you use in paintings and furnishings, as well as lighting conditions, so much so that some rooms will come across as "white" and other will show the color.

Done well, it won't come across as the All Blue or All Pink house, but it will look more homey and "done" than the grey and white houses of the flipped world.

That’s an unpopular opinion for a reason. Who wants a house that’s all almost pink or all almost blue?

And who wants a house that is all builder's white or ubiquitous grey/greige?

Many, many millions more than those who want an almost pink or almost blue house. My mother had the living room painted almost pink. It did not work.

Have Manchester Tan in most of my house. Love it!

Love this color. We have it in probably half the rooms in our house. It’s really nice on rooms with a lot of natural light and bright white pops against it. It is technically part of the BM off white collection. I personally like colors with just a little more depth to them than “white”. I think the lighting and decor have to be on point in order to really pull off all white walls.

I just painted my whole enormous house in Sherwin Williams simply white. I knew about the color because I had done it in a bathroom in another house And I loved how it felt warm and light and not stark. I hate stark white. That said, I test it about six different colors on the wall first. My new house faces east and south. The East room gets really dark after the morning. So the simply white looks nice and bright. And it looks great in my sunny south facing rooms as well. For the trim, we just used a glossy finish of simply white, and it looks great. My dining room has chair molding, and we painted the chair molding Behr silver drop. The whole effect turned out really pretty, but there’s no such thing as the perfect white, the perfect white is the one that goes with the lighting in your house, so if you have the opportunity to test a few samples, do that. I am also a person who dislikes having a different paint color in every room.

In my previous home, we had egret white, which I think is a Benjamin Moore color. I absolutely love that in my previous home, and actually was thinking I would just use it in the new house. But when I put it in the new house, it seemed muddy and kind of clay looking. And that’s because the new home does not get as much light. But it’s a great color.

There’s also a color called dulce de Leche, I forget who makes it. It’s really pretty and warm looking.

Dove White walls and Simply White trim. Both are Benjamin Moore colors.

I like both BM Horizon (which has a blue or gray tint, but is a pretty light neutral gray) or, if you want darker, BM gray owl.

As long as it’s not a rowhouse! We did one coat of horizons in a situation where there were nearby brick houses and it looked lavender :o another coat of a yellowish gray (light pewter) solved the problem.

Agree with the PP, there is no universally perfect white or gray, you gotta test in your space

I think I’m about to have our master bedroom painted Egret White. Our room is very shadowy and I actually like the hint of muddiness. True whites look very washed out on here. But I could see not liking it on larger open living spaces. I originally painted our bedroom Ballet White and it was a mistake. It looks very yellow which is not what I was going for. I think that color needs a lot of natural light not to look yellowish, or maybe just different furniture and floor color. It looks so yellow against brown.

That looks a lot like the color in our bedroom (also with a bright white trim), and I love it.
