I could see doing this if the entire family is eating this way. But if it's just one person, and he isn't doing the cooking (a little kid) I think you'd have issues with his nutrition. The combos of foods listed above are a lot of work to prepare on top of the more traditional foods you'd be making for the whole family minus the vegetarian, which means the veg person would likely be undernourished unless a parent adds thinking about the child's special nutrition needs on top of everything else they're dealing with on a daily basis. We have close friends who are vegans and have done lots of meal prep with them back when we could all be together. There is a lot of more chopping and marinating involved, and it's important that they have a bigger variety of food types and flavors in order to feel satiated. It's much easier to bake some salmon and toss some veggies or salad on the side! |
