Mac and Cheese as Thanksgiving staple?

I know it’s usually a side at bbq places, but other than that, I’ve always thought of it as an entree (mostly for kids) rather than a side dish. Maybe some people add it to their Thanksgiving menu to suit picky kids? There are already so many carb-heavy dishes at Thanksgiving, mac & cheese doesn’t seem like an appealing addition.

We have never had it, but I think it sounds far more appealing than the other sides. I am jealous that others have it!

Wow - eight cheeses! Looks delicious, although it must be a billion calories per serving.

Oh yeah, it's a special occasion recipe because of the sheer amount of cheese and cream. But if you're going to have Mac and Cheese, this is the best version I've had.

There was an article in the Charlotte Observer a few years ago about "black" M&C and "white" M&C. As with a lot of southern food, there's a tradition there that may or may not have spread as we migrated north and west.

Different cultures = different sides

My husband is Puerto Rican so his family always has rice with pigeon peas.

I grew up in the Midwest, so many people have green bean casserole. My mom hates it so she switched to broccoli rice casserole.

My BIL is black, so now we also have Mac n cheese if he is there.

Lots of carbs, but everyone gets their signature dish depending on the guest list that year.

8 different types of cheese?! That seems high-effort.

To me a meal can have potatoes, rice OR pasta, but never more than one. Cheese and chocolate are not flavors I look for on Thanksgiving. There are a lot of things I like but don't want to eat on Thanksgiving. But their mac n cheese means more other stuff for me, so ... shrug

Sorry, we can never be friends. I could totally go for a plate of stuffing, mashed potatoes, and mac n cheese right now.

I don't understand why you would not put these on the same table. And add in cheesy potatoes, sweet potato casserole, too.

OP here -- thanks for all the contributions! I have learned a lot; mainly, that I need a new family or some new friends (ones who will make me mac and cheese at Thanksgiving).

(Especially Patti Labelle's.)
