Are you really thin? Do you miss daily carbs? Is it possible to get weight off with keto and then transition slowly back to a more balanced diet?


I am 5' 7' and 130. My post kid weight (and being in my 40s was creeping up to around 140, so I was never very heavy. When I first started the new eating plan, my weight tumbled down from 140 to 125 and I was thrilled. Then I was surprised to gain some back. But eating this way allows me to effortlessly maintain my pre-kid weight. I don't crave carbs. Junk food for me is now a spoonful of peanut butter or a chunk of 90% dark chocolate with butter spread on it. I eat lots of veggies like broccoli, cauliflower, greens, and brussels. I add butter, salt, and garlic to the veggies Life is good.

One reason I stay with the keto eating pattern is that before I started I has having a stiffness in my neck. Like I couldn't turn my head enough to back up the car. Normal neck function came back after about 3 months. This was unexpected, and I have no idea what exactly happened, but I expect the grains (or something) I was eating were causing some joint inflammation - or something...

I don't miss carbs at all once I'm in ketosis. And no, I don't think you can transition back to a more "balanced" diet and expect to keep the weight off. Maybe you can transition to a paleo diet where you eat more carbs but still no grains or legumes. (Peanuts are the legume exception for me - I love peanuts I've read some accounts of people going from a keto diet to the Whole 30. They loose weight despite eating more carbs. But whole 30 is restrictive too.


What does a day of your diet look like? What do you love to eat for lunch? Dinner? Treat?


Breakfast:

Right away when I get up, or as soon as convenient: espresso coffee with my special blend of "half and half" (one can trader joes coconut cream with an approx equal amount of heavy whipping cream and 3 packets of truvia - this in quart bottle in fridge lasts me a week or so)

Later, like 10:00: Usually one or 2 eggs. Maybe scrambled with veggies and cheese. Or fried and served on top of a sausage patty.

Lunch:
Not a plate of food type of lunch, but I snack on very dark chocolate. Choc is often eaten with butter or peanut butter.
Favorite chocolates: from TJs: Montezuma 100% with nibs, Green and Black 85%, Dark Chocolate Lovers 86%
Others: Lindt 85% or 90%, Aldi 85%

If I'm out for a few hours, I usually put a cheese stick or one of these bars in my purse:

Predinner snack:
slice of cheese or some nuts while preparing dinner

glass or wine or small glass of bourbon
(Keto makes my tolerance for alcohol much lower. I used to drink more than might be healthy for the long term. So my token evening drink is probably much more healthy. But I do get bummed out that I can't party late with the drinkers anymore.)

Dinner:
Varies, but generally always a meat and a vegetable. Last night I made pasta with meaty red sauce and steamed (then buttered) broc for my fam. I made my plate with just the meat sauce and broc. I added some mozz cheese to the sauce on my plate.

More dinners:

Sausage cooked in slow cooker with cabbbage

Thai coconut curry with pork or chick and veggies (homemade to avoid the sugar in the restaurant versions)

"mac" n cheese where the mac is cauliflower (I start with frozen cauli and this is super fast and easy)

Pulled chicken or pork taco dinner. Beans and corn tortillas offered for carb eaters. I either do it as a "bowl" or I use romaine for my taco shell. This is my favorite meal to serve with guests over as everyone takes what works for them. Vegan to keto to picky kids, all are happy with that spread.

After dinner I often have a spoonful of peanut butter. Have you tried the "unblanched" peanut butter from TJs? I'm addicted. So much flavor.

Last night, as a rare treat for me, I made a low carb heart shaped cake. The kids asked for seconds - they usually like my almond flour, coconut flour, stevia creations. (I also make them sugar/flour type stuff for special occasions. They fully understand the difference and I always let them know if it will be "mom-style" or sugar-y advance so they know what to expect.)

There is a couple with a series of videos called Keto Connect. They go through a day of what they eat. I find them to be likable and easy to watch.

There is a very funny youtuber I just found out about. Headbangers Kitchen. A guy in India whos into heavy metal and ketogenic cooking. Love his recipes and his style.
