I do this too, although my boil is usually longer because I miss the start invariably, and I leave them for 12 minutes instead of 15. I also just run them in cold water for a few seconds and eat when they're still warm.

The secret to easy to peel eggs is to put them into already boiling water, rather than putting them into cold water and raising the temperature gradually. Another solution is to get a hard boiled egg cooker. Makes perfect eggs every time, very easy. Something like this:

I put them in with room temp water from the tap. Never gave it a second thought and they're always great. Use big enough pot to give eggs room to move

I have not tried it, but I saw something the other day that suggested adding a tiny bit of oil to the water after cooling. Then cover the eggs and shake them. I think the idea is that you shake a thin layer of oil between the egg and shell so the shell just peels off.

Fill pot with an inch of water. I use a large stockpot so the basket will fit in it w/ plenty of room.

Bring water to a boil.

Once boiling, add the 6 eggs to the basket. Place basket in pot, cover with lid, and set to medium. 13 minutes.

Prep ice water at some point.

Once 13 minutes is up, use tongs to place eggs into ice water. Let sit at least 15 minutes.

Voila!

If peeling at once, you can shake them inside of a lidded container that has a little water in it. Gently, about 20 shakes. All the peels will just fall off


I have tried a million different ways to boil eggs so they are easy to peel. I recently started steaming them and it is THE BEST technique I've ever done.

I use hot start method, boil 30 sec and simmer 11 min total. Perfect, peelabke eggs every time.

This is what I do, but I put them in an ice bath at 12 minutes. No more or the yolk is overdone.


Oh, forgot to add that I turn off the heat as soon as the water boils.


12 minutes keeps the yolk soft enough to mix easily for deviled eggs.

The instapot is almost worth it just for eggs. Seriously the shells fall off. Better than even an egg cooker.

I keep reading all of these things like add oil, old vs new eggs. Because the steamer basket method is simply perfect.
They're so easy to peel, they just about fall off. And the eggs are always perfect.

Krups egg cooker. 7 at a time and the peel slides right off.
