| An easy dish that I can make in mass quantities - shredded meat (chuck roast in a slow cooker with enchilada sauce & fire roasted tomatos, then pull apart and mixed together with some more seasonings), served in baked sweet potatoes, with various toppings - shredded cheddar, scallions, sour cream, etc. |
