Where can DH and I take a 2.5 yr old and not be bored when she's in bed?

Cruise. You might have to wait until your kid is 3 (not sure on that though) but then they can go to the cruise line kids' club for free, and there's also night time babysitting available for an extra fee if you want to get out.

We like staying on club level at RC properties, and requesting our room be near the lounge. Then we can set up baby monitor and go relax in the lounge with drinks, desserts, etc.

Another vote for cruise. It is truely the best option for when you have kids. Free babysitting!

We try to do a room with a balcony or cabin with a porch. Then we have a drink and relax. Walking with the kids all day is exhausting, so the down time is nice. A suite is fine to have extra space, but we don't get to enjoy our surroundings if we're just inside and watching tv (though that is nice too sometimes!). And as mentioned, make sure if doing a suite that there's a door. Last time I didn't think to ask, spent extra $ on the room, and there was just an extra little section of the room with a pull out couch and no door, just a wide archway.
